WINNER!
We love Kentucky bread here at our farm table. I have made loaf after loaf of this easy treat, but lately, I have been on a hunt for a dinner roll recipe that would be my signature bread. Do you know what I mean?
My mom makes delicious homemade crescent rolls and my mother-in-law makes yummy blender rolls. All their kids and grand-kids look forward to a meal at grandma's, in part, because they LOVE their bread.
I think I have bread envy.
I want that same special breadbasket at my house, so I've been trying new recipes.
Friday, I was checking out pinterest, and discovered a recipe for Lambert's Throwed Rolls. Lambert's is a famous destination if you want good food, generous portions, and a unique homey atmosphere.
Those people are seriously nice.
A few years ago, we were with a group of kids and adults who went to Mexico to build a house with Casas por Christo. It was an amazing experience and deserves its own blog post.
On our way home, we promised the kids that we would eat at Lamberts. We drove like crazy trying to get there before closing time, hurrying everyone through restroom breaks and encouraging them not to stuff themselves with junk food.
We were all slaphappy from lack of sleep and general craziness-you know how things get on mission trips-and were so excited to get there and have some "home-cooking".
Unfortunately, we pulled up about 10 minutes after closing time.
Talk about a downer. Boo!
But.....
We knocked on the door and when they heard our story, they opened up for us and fed us a FEAST!
How nice is that?
I have a special love for Lambert's.
However, when I tried the recipe, I was not really expecting it to turn out since I have had kind of mixed results with my tastes-like cooking experiments.
This time I was pleasantly surprised. These rolls are seriously good, and my 3 sons and hubs all gave them the thumbs-up when we had them for dinner on Friday night.
Tastes Like-Lambert's Throwed Rolls
Yield:
12 large dinner rolls
Ingredients:
1 teaspoon sugar
2 1/4 teaspoons (1 pkg.) active dry yeast
1/4 cup warm water (110-115 degrees F)
1 cup warm milk (110-115 degrees F)
1/4 cup (1/2 stick) melted butter
1/4 cup sugar
1 egg, lightly beaten
1 teaspoon salt
4 cups all-purpose or bread flour
2 1/4 teaspoons (1 pkg.) active dry yeast
1/4 cup warm water (110-115 degrees F)
1 cup warm milk (110-115 degrees F)
1/4 cup (1/2 stick) melted butter
1/4 cup sugar
1 egg, lightly beaten
1 teaspoon salt
4 cups all-purpose or bread flour
Butter, honey and/or sorghum molasses, for serving
Instructions:
1. In a small bowl, combine the teaspoon of sugar and the yeast with the warm water and allow to foam (5-10 minutes).
2. In a large mixing bowl, mix the warm milk, melted butter, sugar, egg and salt. Add the yeast mixture and stir.
3. Stir in 3 cups of flour. Stir or knead in another cup of flour (or more, if needed) and knead for 5-10 minutes to make a smooth, elastic dough.
4. Scrape the large mixing bowl clean (or as clean as possible) and place dough in the bowl. Grease the top of the dough with butter or oil and cover with a clean cloth. Place in a warm location (I turn the oven on for 1-2 minutes, then turn OFF and place covered bowl in the warm oven to rise) and let rise until doubled in size, about 60-90 minutes.
5. Liberally butter a 12-cup muffin pan. With buttery hands, deflate the dough and divide into 24 pieces. Roll each piece into a ball. Place two balls in each muffin cup. Gently grease the tops and cover with a clean towel.
6. Let rolls rise in a warm place until nearly doubled in size, about 45 minutes. Preheat oven to 350 degrees Fahrenheit and bake rolls for 20-25 minutes, until tops are browned and rolls are done. (Check rolls after 15 minutes, and cover loosely with foil to prevent excess browning, if needed.)
Toss hot rolls and serve with butter, honey, and/or sorghum molasses!

This is such a great idea to have your own signature rolls! My grandmother definitely has hers and so does my mom. I haven't really ventured into the bread making yet but have been wanting to. I'm so glad you found yours and hope your family falls in love with them.

ReplyDeleteThis is a sweet story and the rolls sound delicious! I, too, wish I had a signature dish...almost everything I make, especially during the holidays was passed down from my mother. It's a nice way to remember her though.

The church that came to Alaska to feed us had a special roll recipe and wowed all of us. They were huge too!

ReplyDeleteI love the Lambert's rolls, and I will definitely have to try this recipe. I don't make much bread ... it's a weakness of mine, and with just DH and me, that would mean way too much bread consumed by me! ha!
